About The CZH Total Analysis - Stage 3 of 3:
Daily, Weekly, Monthly, Quarterly and Annual Reviews of Restaurant/F&B Facility Performance
Once Stage 1 and Stage 2 are completed, CZH will monitor the progress of the new Master Plan and the Financial Information collected by BTN on an ongoing basis:
- Daily Review
Daily By The Numbers Reports and an immediate alert to Management/Ownership if any of the Leading Indicator(s) are out of line with Budgeted Expectations.
- Weekly Review
Weekly By The Numbers Reports and an immediate alert to the Management/Ownership if any Financials are out of line with Budgets. A documented weekly call will be held with the F&B Director or Restaurant Manager(s) to discuss their Operations and their Financial Performance. A documented weekly call will be held with the Designated Representative of the Management Department. Calls to the Chef and PR Firm, as required/warranted based upon activity, in order to stimulate Sales and PR opportunities.
- Monthly or Period Review
Formal Written Review of all Monthly/Period By the Numbers Reports delivered to Management/Ownership. Formal Written Review/Analysis of the Operator Generated Financial Statements for the F&B Department/Restaurant(s) and a list of specific recommendations when Properties are not performing to Budgeted Expectations, delivered to Ownership. A monthly call will be held with the Restaurant to review Financials and availability via teleconference, when requested for Owners' Meetings.
- Quarterly Review:
A trip to the Restaurant to review all operations with the Local Management Team, focusing on Food, Beverage and Service Quality; Financial Performance for the Quarter, Public Relations progress and opportunities. A detailed written report will be prepared for each Property Visit and delivered to Ownership within one week of each visit.
- Annual Review:
A Complete Performance Review in writing for the Restaurant, for all aspects of the Operations. Annual Financial Review and assistance in Budget Formulation for the next Fiscal Year. A written review of all Menus, Wine List and Beverage Programs to include Sales Mix Analysis and Cost Analysis based on pricing and current commodities/product purchasing trends -- with recommendations on corrective action, if needed, and suggestions on all Menus and Wine Lists.
